Simply put, a 'Brookie' is a cross between a cookie and brownie. And the combo is a great one.
For this Brookie bar we combine our chocolate chip cookies with our double chocolate brownie. It's chewy, soft and comes with a cookie crunch.
This Brookie slab is uncut. The slab is approximately 35cm (W) x 26cm (L). It has a thickness of 3cm approx although that can vary from the edge to the middle like any brownie style bar.
To prepare the Brookie for serving, unwrap the frozen slab and rewrap it in a fresh layer of plastic wrap—the old plastic may contain ice crystals which can melt and make the top wet in appearance. Thaw in the refrigerator to an internal temperature of about 4°C (we recommend overnight).
When you're ready to serve, remove the plastic wrap and cut to desired size and let come to room temperature.
