Our amazing Chef Dewi gets all the credit for this delightful creation. It looks fun and beautiful, tastes perfectly delicious, and is absolutely vegan.
How did this cake get such a perfect flavor combination profile? The secret is in combining blueberries with layers of blueberry preserve and pecan all-around a vanilla cake. The slight tartness of blueberries, the softness of the vanilla cake, the crunchiness and (obviously) nuttiness of the pecans, come together in perfect harmony for every tastebud to enjoy.
The 10" cake serves approximately 10-12 people. The petite 6" cake serves 5-6 people. Cut it into as many slices as needed — there is no such thing as too much of this vegan beauty.
